Kala Namak - Indian Black Salt
Kala Namak (Indian black salt or Sanchal) is an unrefined mineral salt that is actually a pearly, pinkish-gray color rather than black. Kala Namak has a strong sulfuric flavor and aroma. Sodium chloride combined with iron and sulphur compounds give kala namak its color, slight bitter taste, and highly distinctive smell. Non-indians say it has a smell similiar to rotten egs or hard-boiled eggs. It is not interchangeable with sea salt or table salt because of its distinct flavor.
Kala Namak is used extensively in Indian cuisine as a condiment or added to chaats, chutneys, all kinds of fruits, raitas, and other savory Indian dishes. Vegan chefs use this salt for adding in egg-like flavor to dishes like tofu scrambles. Chaat masala, an Indian spice blend, is dependent upon black salt for its characteristic sulfurous hard-boiled egg aroma.
