Smoked Sea Salt
Smoked salt is an aromatic salt which as the name implies has been smoked in a smoker. Smoked salt consists mainly of sea salt and smoke volatiles condensed on the salt. It is generally made with iodine free sea salt as opposed to processed ionized table salt. It differs from "smoke flavored salt", which has had a liquid smoke flavoring added to it. It can be used to add a smoked flavor to various foods. Careful on the amount used; smoked salt can be quit potent.
Natural smoked salt is costly to manufacture and purchase due due the cost of the specialized smokers and the time required to properly smoke the salt (5-10 days). Salt is hygroscopic, attracting moisture from the air, it is this characteristic of salt that has led to the development of proprietary methods and machinery in the manufacturing of smoked salt.
